I’ve always loved salads, I was raised eating at least two different salads per meal, learning that “..salad helps you have a balanced nutrition adding fibre in your diet..”. Beetroot and carrots were there in one way or another but never together! I love both, I though they’d match, so I introduced them! I was right; love at first sight, no “cooking time” required..

ingredients
- 1 medium beetroot
- 2 medium carrots
- 20ml. olive oil
- lemon juice
- salt
directions
- Peel the beetroot and carrots and wash them slightly with some water
- In a medium sized bawl grate the carrots
- Grate there also the beetroot
- Add lemon juice, salt and the olive oil, mix well and taste it. Trust your senses and add what’s missing and..

Tips!
> This portion is for two people combined with main course but can also be eaten by one as a light lunch together with some kalamata olives and a crispy slice of garlic bread!
> You can replace lemon juice with vinegar.. a whole new dimension!

One of my favorite salads my best friend made for us one day for lunch.Ever since I am doing it pretty often.
i add also a teaspoon of balsamic vinegar along with the lemon juice. Yummy !!!
