Chocolate cake

This chocolate cake is for those well prepared for it.. Meaning those who love chocolate, love desserts, love enjoying things to the edge like extra dose of cocoa-butter-powder sugar altogether exploding in your mouth.. Seriously, if you’re not in to extreme situations don’t try that!!  This is one of these tall cakes that are relatively wet inside, melting in your mouth in every bite.. I prepared it for a very special occasion, for my birthday!

ingredients

for the cake

  • 350gr. flour
  • 220gr. sugar
  • 60gr. unsweetened cocoa powder
  • 2 tsp. baking powder
  • 1½ tsp. baking soda
  • 1 tsp. salt
  • 2 eggs
  • 240ml. milk
  • 100ml. vegetable oil
  • 2tsp. vanilla extract
  • 240ml. boiling water

for the frosting

  • 160gr. butter
  • 50gr. unsweetened cocoa
  • 200gr. powder sugar
  • 80ml. milk
  • 1tsp. vanilla extract

Some grated dark chocolate for decoration.

directions

for the cake

  • Preheat oven to 175 degrees C. Prepare two 22cm cake pans by buttering and lightly flouring.
  • Add flour, sugar, cocoa, baking powder, baking soda and salt into a large bowl. Whisk through and mix well.
  • Add milk, vegetable oil, eggs, and vanilla to flour mixture and mix together on medium speed until well combined.
  • Reduce speed and carefully add boiling water to the cake batter and then mix on high speed for 1′.
  • Seperate cake batter evenly between the two prepared cake pans. Bake for 35′, the cakes in the end ill be a little bit moisty.
  • Remove from the oven, cool for 10′ and then remove from the pan and let them cool completely.

for the frosting

  • Put cocoa to a large bowl and whisk through to remove any lumps.
  • Beat together butter and cocoa powder until well-mixed.
  • Add sugar and milk to cocoa mixture step by step: add half of sugar followed by half of milk and then continue same way with the rest. If your mixture looks too stiff then you can add some more milk. If on the other hand looks too wet then add some powder sugar.
  • Add vanilla extract and mix well.

coming together..

  • Place one of the cakes in a big plate and add some of the frosting. Lay it smoothly so that it is evenly spread in all cake surface.
  • Add on top the other cake. Put some more frosting on top, lay it as well making sure that you cover also the sides of your cake. Using a knife make some ‘waves’ with the frosting. Grate some dark chocolate on top to decorate your cake.
  • Keep in the fridge for at least and hour and ..

Tips!

Instead of vanilla extract you can use both for the cake and the frosting some of your favorite liquor !
