An apple a day keeps the doctor away, who gave the apple to whom, who took the first bite, the apple never falls far from the tree, she’s apples and so many other stories. Apple is maybe the most modest fruit of all. However, it has inspired many artist (think of all those paintings with an bowl full of apples laid on a table), it’s a basic source of nutrition for healthy babies (remember all those apple fruit baby cremes tour mom made?) and it’s the basic ingredient for delicious sweet or savor recipes. Here in the Netherlands apples have a starring role in peoples’ diet. People eat apples everywhere; in the office while typing an email, on the bike while cycling with a baby on the back seat in a rainy day, in the train reading a newspaper, at the gym after the last stretching. Green, red, yellow.. all kinds of them 🙂
the recipe
For the dough
- 250gr. cold butter
- 500gr. flour
- 1 baking powder bag (20gr.)
- 130gr. sugar
- 70gr. cognac or bitter almond liquor
- 2 vanilla powder tubes or extract of 1 fresh stick
For the apple mixture
- 3 grated apples
- 130gr. sugar
- 1tbsp. cinnamon
- walnuts or raisins, if you like
Some extra cinnamon and some powder sugar to serve.

For the dough
- Mix all the ingredients with your hands, grating them not kneading . In the end you need to have small pieces of dough and not a concrete ball.
For the apple mixture
- In a bowl mix the grated apples, cinnamon and sugar with a spoon.
Coming together..
- Preheat your oven to 180 degrees C.
- Grease a baking/tart pan with a 30cm. diameter and lay 4/5 of the grated dough. Push smoothly with your hands to cover any empty spots in your pan.
- Add on top the apple mixture to cover all dough surface.
- Finally sprinkle the rest of the dough (1/5) on top of the apple mixture.
- Bake for 45′ and when ready let it cool down before you cut it.
- Serve with some cinnamon and powder sugar and..

Tips!
- Using the same dough you can make various fruit versions or even marmalade ones!
- Instead of a baking/tart pan you can use a maffin pan and make smaller atomic apple pies. With the recipe above you will get 16 small apple pies.
