It’s all about those sweet cookies with butter and baked almonds inside, so soft that melt in your mouth, make you smile from delight! It’s a local Cretan recipe really close to the traditional ‘kourampiedes’, the cookies we make in Greece for Christmas. Greece, even though a small country, offers lots of variety when it comes to food and recipes. Every region (even city) has their own recipes, everyone claims their recipes are the best… you know how it goes 🙂
(almost 40 cookies)
- 210gr. cow butter
- 400gr. flour
- 170gr. baked almonds cut in pieces
- 1 egg yolk
- 35gr. sugar
- 20gr. liquor
- 1/2tsp. cinnamon
- 1/5tsp. cloves
- 1tsp. baking powder
Powder sugar to serve.
- Preheat your oven at 160 C.
- Beat the butter and sugar for 10′, in order to get ‘white’ bater.
- Add the yolk, liquor, spices and almonds and mix well.
- Add the flour and baking powder and mix with your hands. The dough needs to be soft and not stick on your hands.
- Let the dough rest for some minutes.
- Shape your cookies in whatever form you want, keep the same thickness for all 3cm and bake in a baking paper for 20′-25′ depending in your oven.

- In order to bake the almonds, cut them in small pieces with a knife and then bake them in160 C for 3′-4′.
- You can make the cookies with no almonds if you want, the rest of the steps remain the same.
