‘Revani’ – Semolina cake


‘Revani’ or semolina cake is a traditional Greek dessert coming from Veria. Where also my godmother comes from. My godmother is a lovely dynamic and vivid woman. She is really ‘open’, she smiles a lot, takes good care of herself and others, she doesn’t let difficulties stand in her way and she is an amazing cook! Apart from everything traditional Greek she always dares in the kitchen, she also creates her own kitchen habits! This is her recipe..

for the cake

  • 320gr. coarse semolina
  • 300gr. Greek yogurt
  • 230ml. sunflower oil
  • 4 eggs
  • 250gr. sugar
  • 120gr. flour
  • 16gr. vanilla powder
  • 4gr. baking powder
  • 1/2tbsp. baking soda

for the syrup

  • 900gr. sugar
  • 1200ml. water
  • 2tbsp. lemon juice
  • skin of 1 lemon



In order to complete the dessert you’ll have to have the syrup lukewarm and the cake hot, right out of the oven. For that reason you begin with the syrup.

for the syrup

  • Put all ingredients in a pot and warm it up. When it starts boiling, stir a little bit and let it there for 10′ and then remove from the fire.

for the cake

  • Mix semolina and yogurt in a big bowl and leave them for 1 hour.
  • A little bit before the hour passes, start preheating your oven in 180 degrees C and cover with oil a pan size 31x24cm.
  • Beat the sugar and the oil with a mixer.
  • Add the eggs one by one and then the semolina-yogurt mixture.
  • Keep beating and add the flour, baking powder, vanilla and baking soda.
  • Put the mixture in the pan and bake for 40′-45′ until it gets a nice brown color.

  • When you take the cake out of the oven, let it rest for 3′-4′ and then using a knife make random cuts throughout the surface of the cake. This way you’ll help it absorb the syrup faster and better.
  • Use a big soup spoon to pure the syrup in the surface of the cake. It will take sometime until the cake absorbs the whole syrup, in the beginning you’ll see it remaining in the surface of the cake. Don’t worry, it will be absorbed nicely!
  • Let the dessert get cold and..



  • If you want your dessert to have more height then bake it in a smaller pan!
  • This dessert is perfectly combined with some vanilla ice-cream!
