Greeks love souvlaki. I believe everyone does actually. It’s delicious no matter what. No matter if you make it with meat or not.. So here is a ‘new version’; cod fish souvlaki! Apart from being easy to make, tastes awesome and has great looks, if you serve it with garlic bread then the taste lifts up in higher levels. If you happen to have also an open fire instead of baking it in the oven then please.. let me know, I’ll be there!

for the cod ‘souvlaki’
- 300gr. fresh cod filet
- 2 medium sized potatoes
- 1 sweet potato
- 1tbsp. olive oil
- 2 garlic cloves
- salt and black pepper
- extra olive oil for baking
- mustard for serving
for the garlic bread
- 5 thick slices of bread
- 2 garlic cloves
- 2tbsp. olive oil
- salt and oregano

for the cod fish ‘souvlaki’
- We peel the potatoes and we boil them with some salt for 15′ (since the water starts boiling). We don’t want them to be fully baked as we are going to finish them in the oven. They need to be soft enough to be able to push them to the wooden skewers.
- Meanwhile cut the fish in medium sized pieces, put them in a bowl and grate the garlic directly in there. Add the olive oil, salt, pepper mix well and keep it in the fridge until the potatoes are ready.
- When the potatoes are ready, let them cool down a little bit. Cut them into pieces similar size to this of the fish.
- Preheat your oven to 180 degrees C in the grill mode.
- Built the ‘souvlaki’ putting pieces of fish and potatoes the one after the other and place them in a baking pan with a baking paper. Sprinkle some salt and pure some olive oil on top.
- Bake for 15′-17′ until they get a nice brown color and..
for the garlic bread
- Bake the slices of bread in the toast maker until the get a bit crispy but remain soft within.
- When ready grate on top the garlic (as much as you like!), add the olive oil, salt and the oregano.

- Lay some mustard on the garlic bread, put the pieces of the souvlaki on top and ..

Tip!
- You can make the garlic breads with small round breads instead of slices. The procedure is the same and in the end you will be able to make a lovely souvlaki sandwich with garlic bread!
- You can make the souvlaki using any fish you like!
